High fructose sugar was introduced in the late seventies so that people in the western countries could benefit from it and switch to HFCS. HFCS is cheaper than sucrose, and can also be transported and blended more easily because of its liquid state. There are two types of HFCS commonly used in production of foodstuffs today, these are HFCS 42%, and HFCS 55%. HFCS is made by processing corn starch to obtain glucose, then transforming the glucose into fructose.
